Grilled Sourdough with Goat Cheese

  • â…“ cup butter, melted
  • 12 slices sourdough bread, ½” thick
  • 2 apples, peeled, cored and cut into ½” rings
  • 1 medium red onion, peeled and cut into ½” rings
  • â…“ cup dried cranberries
  • ÂĽ cup crystallized ginger, finely chopped
  • 4 oz. soft goat cheese or cream cheese
  • Honey


  1. Heat grill to medium high heat.

  2. Brush sourdough slices, apple slices and onion slices with melted butter; set aside sourdough slices.

  3. Place apples and onions on grill. Cook for 10 minutes or until lightly browned; turn over and continue cooking until lightly browned and softened (8-10 minutes).

  4. During last 2 minutes of cooking, place sourdough slices on grill. Cook sourdough for 1 minute then turn over and continue cooking for 1 additional minute

  5. Coarsely chop apples and onions; in small bowl, stir together apples, onions, cranberries and ginger.

  6. Spread each slice of grilled sourdough with goat cheese, then top with a heaping tablespoon of apple mixture. Drizzle with honey.

  7. Refrigerate leftovers.
